Ingredients
For the soup:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 yellow onion, diced
- 2 pounds ground beef, turkey, or venison
- 1 (28-ounce) can corn, drained
- 1 (28-ounce) can black beans, rinsed and drained
- 1 (28-ounce) can diced tomatoes
- 3 cups water
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon cumin
- 2 tablespoons chili powder
- 1 teaspoon cilantro
- 1 (1-ounce) packet ranch dressing seasoning
Optional toppings:
- cheese, to taste, shredded
- sour cream, to taste
- avocado, to taste, diced
- tortilla chips, to taste
Directions
Step 1 -In a large saucepan, heat the olive oil over medium heat.
Step 2 -Add the garlic and the onions and sauté until the onions are translucent, about 4-5 minutes.
Step 3 -Add the ground beef to the saucepan and brown it until it is cooked through, about 5-7 minutes.
Step 4 -Drain the beef mixture of excess fat.
Step 5 -Add the beef mixture to the slow cooker.
Step 6 -Add the corn, the black beans, the diced tomatoes and their juices, and the water into the slow cooker.
Step 7 -Season with the salt, the pepper, the cumin, the chili powder, the cilantro, and the ranch dressing packet. Stir together until mixed well.
Step 8 -Cover and cook on low for 4-6 hours.
Step 9 -Serve with your favorite toppings.
