Ingredients
- 2 bananas, ripe and smashed
- 1/3 cup Greek yogurt
- 1/3 cup butter, melted, plus more, to taste, for greasing the dish
- 3/4 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- salt, to taste
- 1 1/2 cups all-purpose flour
- 1/2 cup blueberries
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Using the extra butter, grease a 4×8-inch loaf pan, then line the pan with parchment paper.
Step 3 –Using the extra butter, grease the parchment paper.
Step 4 –In a large bowl, mix the bananas, the yogurt, and the remaining 1/3 cup of the butter using a wooden spoon or fork.
Step 5 –Add the sugar, the egg, and the vanilla and mix.
Step 6 –Sprinkle the baking soda and the salt over the batter and mix in.
Step 7 –Add the flour to the batter and mix just enough to blend, do not overmix.
Step 8 –Fold the blueberries into the batter until evenly distributed.
Step 9 –Pour the batter into the prepared pan.
Step 10 –Bake until a knife inserted in the center comes out clean, about 1 hour.
Step 11 –Cool the bread on a wire rack in the pan.
Step 12 –Transfer the bread from the pan and slice.
Step 13 –Serve.
