The Doodle Bars

The Doodle Bars are just as much fun to eat as they are to say! Each one is a tender, vanilla-infused cookie bar, cooked to golden perfection. Then they’re topped with cinnamon sugar… and, is there a phrase that evokes happiness more than “cinnamon sugar”? It’s hard to imagine one! Best of all, The Doodle Bars only need half an hour to get ready, so your sweet tooth doesn’t need to wait long for something fun!

Ingredients

For the dough:

  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1 cup all-purpose flour

For the topping:

  • 1 tablespoon sugar
  • 1 teaspoon ground cinnamon

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line an 8×8-inch square baking pan with aluminum foil or parchment paper, and coat it with nonstick cooking spray.

Step 3 –In a large bowl, add the butter and 1 cup of the sugar and, using an electric mixer, beat until pale and light.

Step 4 –Add the salt, the egg, and the vanilla to the butter-sugar mixture and beat until well-combined.

Step 5 –Add the flour to the butter mixture and stir until no streaks of dry ingredients remain.

Step 6 –Scoop the dough into the prepared pan and smooth it out into an even layer.

Step 7 –In a small bowl, add the remaining sugar and the cinnamon and stir to combine.

Step 8 –Sprinkle the dough evenly with the cinnamon-sugar.

Step 9 –Bake until the bars are set and the edges are just very lightly browned, about 30 minutes. Be careful not to overbake them.

Step 10 –Allow the bars to cool in the pan before slicing.

Step 11 –Slice and serve.
