The Very Best Baked Potato Bake takes the best ideas from casseroles, baked potatoes, and mashed potatoes and brings them all together to make one potato-tastic dish! Creamy, whipped potatoes are infused with tangy sour cream, melty cheese, and succulent bacon for the full baked-potato-and-all-the-fixin’s experience! Ingredients

  • 8 medium potatoes, peeled, cut into 1-inch chunks
  • water, to taste
  • 1 cup evaporated milk
  • 1/2 cup light sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups cheddar cheese, shredded, divided
  • 6 slices bacon or turkey bacon, cooked and crumbled, divided
  • green onions, optional, to taste, sliced

Directions

Step 1 –In a large saucepan, add the potatoes. Cover the potatoes with water and bring to a boil over medium-high heat.

Step 2 –Cook the potatoes until tender, about 15-20 minutes.

Step 3 –Drain the potatoes.

Step 4 –Preheat the oven to 350 degrees F.

Step 5 –Grease a 3-quart baking dish.

Step 6 –Return the potatoes to the saucepan.

Step 7 –Add the evaporated milk, the sour cream, the salt, and the pepper to the potatoes and, using an electric mixer, beat them together until smooth.

Step 8 –Add 1 1/2 cups of the cheese and 1/2 of the bacon to the potato mixture and stir to combine.

Step 9 –Spoon the potato mixture into the prepared casserole dish.

Step 10 –Bake the casserole until heated through, 20-25 minutes.

Step 11 –Top the casserole with the remaining cheese, the remaining bacon, and the green onions.

Step 12 –Bake until the cheese is melted, about 3 minutes.

Step 13 –Serve.
