Tinga-licious Quesadillas

Well, isn’t this an idea? Quesadillas stuffed with chicken tinga. What a concept! Tinga-licious Quesadillas fill the cheesy, crispy tortillas with the spicy, juicy Mexican favorite, along with fluffy rice and citrus-fragrant cilantro. And that’s not even the end of it! There’s a homemade garlic-lime sauce and mango salsa on top! There really is no end to the wonders that Tinga-licious Quesadillas provide. It’s the best culinary idea you can make at home!

Ingredients

For the quesadillas:

  • 2 tablespoons olive oil
  • 1 chicken breasts or thighs, boneless and cubed
  • 1 yellow onion, chopped
  • 1 poblano pepper, sliced
  • 3/4 cup red enchilada sauce
  • 2 chipotle peppers in adobo, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 2 1/2 cups Mexican cheese blend, shredded
  • 1 cup rice, cooked
  • 4 large flour tortillas, warmed
  • 1 cup fresh cilantro, chopped, plus more, to taste, for garnish

For the garlic-lime sauce:

  • 1/2 cup plain Greek yogurt, can substitute sour cream
  • 3 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 1 clove garlic, grated

For the mango salsa:

  • 1 mango, diced
  • 2 teaspoons lime zest

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –In a large skillet over medium-high heat, add the olive oil, the chicken cubes, and the onions and cook until the chicken cubes are seared and just reach an internal temperature of 165 degrees F, about 5-8 minutes.

Step 3 –Add the poblano pepper, the enchilada sauce, the chipotle chiles, the oregano, the cumin, and the salt and stir to combine.

Step 4 –Reduce the heat to medium and simmer until the sauce thickens, about 5 minutes.

Step 5 –Transfer the skillet from the heat.

Step 6 –Layer the cheese, the chicken, and the rice evenly over 1/2 of each of the tortillas, reserving some of the cheese for sprinkling.

Step 7 –Sprinkle the filling of the tortillas evenly with the reserved cheese and 1 cup of the cilantro.

Step 8 –Fold the tortillas over the fillings.

Step 9 –Arrange the quesadillas on a baking sheet.

Step 10 –Bake the tortillas until crispy and the cheese is melted, about 10 minutes.

Step 11 –In a bowl, add the yogurt, the mayonnaise, the lime juice, and the garlic and stir to combine.

Step 12 –In a small bowl, add the diced mango and the lime zest and toss to combine.

Step 13 –Garnish the quesadillas with the extra cilantro.

Step 14 –Serve with the garlic-lime sauce and the mango salsa.
