Trailblazer Bars

Ingredients

  • 1/2 cup honey
  • 3 tablespoons creamy peanut butter
  • 1 tablespoon coconut oil
  • 1 teaspoon pure vanilla extract
  • 3/4 cup old-fashioned rolled oats
  • 3/4 cup crispy rice cereal
  • 1/4 cup ground flaxseed meal
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/2 cup mixed dried fruit
  • 1/3 cup mixed nuts
  • 1/3 cup dark chocolate chips

Directions

Step 1 –Line an 8×8-inch baking pan with aluminum foil or parchment paper, leaving a few inches of overhang on two of the sides.

Step 2 –Generously coat the foil or the paper with baking spray.

Step 3 –In a microwave-safe bowl or a small saucepan over medium heat, combine the honey, the peanut butter, and the coconut oil.

Step 4 –Melt the honey mixture until smooth, stirring to fully combine.

Step 5 –Transfer the honey mixture from the heat and stir in the vanilla.

Step 6 –Let the mixture cool for 5 minutes.

Step 7 –In a large mixing bowl, combine the oats, the rice cereal, the flaxseed meal, the cinnamon, and the salt.

Step 8 –Stir the dried fruits, the nuts, and the chocolate chips into the oat mixture.

Step 9 –Pour the honey mixture over the oat mixture and stir until everything is evenly coated.

Step 10 –Scoop the mixture into the prepared baking pan, pressing it into an even layer.

Step 11 –Place the bars in the fridge to set for at least 2 hours and up to overnight.

Step 12 –Remove the bars from the pan using the overhang of the foil or the parchment paper.

Step 13 –Using a sharp knife, slice them into bars.

Step 14 –Serve.
