Ingredients
For the dressing:
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For the salad:
- 1 cucumber, seedless, cut into half rounds
- 1 pint Campari tomatoes, can substitute cherry or tomatoes-on-the-vine
- 1 cup Kalamata olives
- 1/2 cup red onions, sliced
- 1 (8-ounce) block feta cheese
- 2 tablespoons capers

Directions
Step 1 –In a medium bowl, add the olive oil, the red wine vinegar, the oregano, the salt, and the black pepper and whisk to combine.
Step 2 –In a large bowl, add the cucumber, the tomatoes, the Kalamata olives, and the red onion and toss to combine.
Step 3 –On a cutting board with a sharp knife, add the feta cheese block and cut it in half diagonally.

Step 4 –Add the feta cheese halves on the top of the salad mixture.
Step 5 –Evenly sprinkle the capers on top of the salad mixture.
Step 6 –Evenly drizzle the dressing over the salad mixture.
Step 7 –Serve.
