Each rib is marinated in a zesty, smoky spice rub and then brushed with sweet and tangy barbecue sauce caramelized on the grill; it’s a party of cookout flavors infusing each bite of meat. Ingredients
For the ribs and the dry rub:
- 3 racks baby ribs
- 4 tablespoons brown sugar
- 2 tablespoons paprika
- 1 tablespoon kosher salt
- 2 teaspoons black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion salt
- 1 teaspoon celery salt
- 1 teaspoon cayenne pepper
- 1 teaspoon ground cumin
For the barbecue sauce:
- 1 cup ketchup
- 1 tablespoon Worcestershire sauce
- hot sauce, to taste
- 1 cup water
- 1/4 cup vinegar
- 1 tablespoon sugar
- 1 teaspoon kosher salt
- 1 teaspoon celery seed

Directions
Step 1 –Remove the membrane from the back of the ribs and cut each rack of ribs in half.
Step 2 –In a small bowl, combine the brown sugar, the paprika, 1 tablespoon of the salt, the black pepper, the garlic powder, the onion salt, the celery salt, the cayenne pepper, and the ground cumin.
Step 3 –Place one full rack of ribs on top of two sheets of heavy-duty foil, repeating for each rack of ribs.
Step 4 –Apply the rub generously to the front and back of the ribs and pat gently to ensure the rub adheres.
Step 5 –Fold and wrap the foil around each rack and allow the ribs to marinate in the refrigerator for at least 30 minutes and up to overnight.
Step 6 –Preheat the oven to 300 degrees F.
Step 7 –Place the wrapped ribs on a rimmed baking sheet to catch any juices that may leak.
Step 8 –Cook the ribs until the bones can be twisted with little resistance, about 2 hours 30 minutes-3 hours.
Step 9 –Combine the ketchup, the Worcestershire sauce, the hot sauce, the water, the vinegar, the sugar, the remaining salt, and the celery seed in a medium saucepan.
Step 10 –Heat the sauce mixture to a boil.
Step 11 –Reduce the heat to low and let the sauce simmer until the flavors have melded together, about 30 minutes.
Step 12 –Preheat the grill to medium-high heat.
Step 13 –Unwrap the cooked ribs and transfer them carefully to the grill
Step 14 –Brush with the barbecue sauce and grill until the exteriors are caramelized, about 5-10 minutes.
Step 15 –Serve with the remaining barbecue sauce.
