Ingredients
- 5 cups rotisserie chicken, shredded
- 3 tablespoons scallions, thinly sliced
- 3/4 cup mayonnaise
- 2 tablespoons honey
- 2 teaspoons jalapeño, minced
- 1 teaspoon lime zest, plus 1 tablespoon fresh lime juice
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 12 butter lettuce leaves, from about 2 heads
- 1 cup fresh mango, cubed into 1/2-inch pieces
- 1/2 cup cashews, lightly salted, roasted and chopped
- 1/4 cup packed fresh cilantro leaves, packed
- lime wedges, optional, to taste, for serving
Directions
Step 1 –In a medium bowl, add the chicken and the scallions and toss to combine.
Step 2 –In a small bowl, add the mayonnaise, the honey, the jalapeño, the lime zest, the lime juice, the salt, and the pepper and whisk to combine.
Step 3 –Add the mayonnaise mixture to the chicken mixture and gently stir to combine.
Step 4 –Evenly divide the chicken mixture in the center of each of the lettuce leaves, about 1/2 cup per leaf.
Step 5 –Top the chicken mixture with the mango, the cashews, and the cilantro.
Step 6 –Serve with the lime wedges.
