Whipped Frozen Lemonade

Whether you prefer to spend your summers in a pastel-painted house on the coast of a little beach town, or a lakeside cabin surrounded by nothing but the sound of the trees wisping in the wind, or just on your own back porch, having a glass of this Whipped Frozen Lemonade in hand makes any location all the more perfect. It’s especially delightful on those really hot days when a normal glass of lemonade just won’t cut it. This extra icy, deliciously tart, and superbly sweet sipper is the perfect treat to cool you off after all that fun and relaxation you’ve had in the great outdoors of your choosing. The care-free and fun Whipped Frozen Lemonade is what summertime is all about!

Ingredients

For the lemon simple syrup:

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • zest of 1 lemon

For the lemonade:

  • 1/2 cup lemon juice, freshly squeezed
  • 1 cup full-fat coconut milk
  • 2 1/2 cups ice cubes
  • 1 lemon, sliced, for garnish

Directions

Step 1 –In a small saucepan over medium heat, bring the sugar and the water to a simmer and cook, stirring occasionally, until the sugar dissolves.

Step 2 –Stir the lemon zest into the simple syrup and transfer the saucepan from the heat.

Step 3 –Cover the saucepan and let the lemon simple syrup steep for 1 hour.

Step 4 –Strain the lemon simple syrup through a fine-mesh sieve and discard the zest. There will be extra lemon simple syrup, which can be refrigerated for up to 1 week.

Step 5 –Add 1/2 cup of the lemon simple syrup, the lemon juice, the coconut milk, and the ice to a blender and blend until the ice is crushed and the mixture is slushy.

Step 6 –Divide the frozen lemonade between four 8-ounce glasses and garnish with the lemon slices.

Step 7 –Serve immediately.
