Ingredients

  • oil, to taste
  • 6 baking potatoes
  • 6 slices bacon
  • 6 tablespoons butter, softened
  • 6 tablespoons parmesan cheese, freshly shredded
  • 1 cup sharp cheddar cheese, freshly shredded, divided

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Rub the oil over each of the potatoes and place on a baking sheet.

Step 3 –Bake the potatoes until tender, about 1 hour.

Step 4 –While the potatoes are baking, in a skillet on the stove-top, cook the bacon until crisp. Crumble it when cool enough to touch.

Step 5 –Allow the potatoes to cool for 10 minutes then slice them in half.

Step 6 –Carefully scoop the insides of each half into a mixing bowl, leaving a small amount of potato on the skin. Reserve the potato skins.

Step 7 –Add the butter to the potatoes and lightly mash.

Step 8 –Add the crumbled bacon, the parmesan, and 1/2 cup of the cheddar cheese to the potato mixture and lightly mix together.

Step 9 –Spoon the potato mixture back into the potato skins.

Step 10 –Top the potatoes with the remaining cheddar cheese.

Step 11 –Bake until the cheese has melted, about 20 minutes.

Step 12 –Serve immediately.
