Ingredients
- 1 cup quinoa
- 1 cup grape or cherry tomatoes
- 8 ounces fresh mini mozzarella cheese balls
- 10 basil leaves, torn, plus more, to taste
- 3 tablespoons rice vinegar, plus more, to taste
- 2 tablespoons olive oil, plus more, to taste
- 3/4 teaspoons salt, plus more, to taste
- 1/2 teaspoons black pepper, plus more, to taste
- sugar, to taste
Directions
Step 1 –Cook the quinoa according to the package directions. There should be about 2 cups of cooked quinoa.
Step 2 –In a large bowl, add the cooked quinoa, the tomatoes, the mozzarella, the 10 torn basil leaves, 3 tablespoons of the rice vinegar, 2 tablespoons of the olive oil, 3/4 teaspoon of the salt, 1/2 teaspoon the black pepper, and the sugar and toss until it is well-combined.
Step 3 –Taste the salad and season with the extra basil leaves, the extra rice vinegar, the extra olive oil, the extra salt, the extra black pepper, and the sugar, as needed. Toss to combine.
Step 4 –Serve the salad immediately or store it sealed in the refrigerator for up to 24 hours.
