Ingredients

  • 12 ounces fettuccine
  • 4 slices bacon
  • 3 cloves garlic, minced
  • 1/2 pound chicken breasts, boneless, skinless, and cut into strips
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 4 large eggs, beaten
  • 3/4 cup parmesan, freshly grated, plus more for garnish
  • 1/3 cup parsley, freshly chopped, plus more for garnish

Directions

Step 1 –In a large pot of salted boiling water, cook the pasta according to the package directions until al dente.

Step 2 –Reserve 1/2 cup of the pasta water and drain the rest.

Step 3 –Return the pasta to the pot.

Step 4 –In a large skillet over medium heat, cook the bacon for 5 minutes.

Step 5 –Add the garlic and cook the bacon until crispy about 2-3 minutes.

Step 6 –Transfer the bacon and the garlic to a bowl and drain 1/2 of the fat from the skillet.

Step 7 –Add the chicken to the skillet and increase the heat to medium-high.

Step 8 –Season the chicken generously with salt and pepper and cook, flipping halfway through, until no longer pink and cooked to 165 degrees F, about 10 minutes.

Step 9 –Reduce the heat to low and return the bacon to the skillet, tossing to combine.

Step 10 –Add the cooked pasta and toss to combine.

Step 11 –In a small bowl, beat together the eggs, parmesan, and parsley. Season the egg mixture with salt and pepper.

Step 12 –Pour the egg mixture over the pasta and rapidly toss to coat and gently cook the egg mixture into a sauce, adding a couple of tablespoons of the reserved pasta water until it becomes creamy and cohesive.

Step 13 –Garnish the pasta with parmesan and parsley and serve immediately.
