Ingredients

  • 1/4 cup za’atar seasoning
  • 1/4 cup olive oil
  • 3 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 3 pounds chicken thighs, bone-in
  • 1 cup pimiento-stuffed olives
  • 1/2 cup dried apricots
  • 1/2 cup dried plums, pitted
  • 1/4 cup water
  • basmati rice, optional, cooked and hot, for serving

Directions

Step 1 –In a large bowl, combine the za’atar seasoning, olive oil, oregano, salt, cumin, and turmeric.

Step 2 –Add the chicken to the bowl and toss to coat.

Step 3 –In the bottom of a slow cooker, arrange the olives, apricots, and plums.

Step 4 –Add the water.

Step 5 –Top with the chicken.

Step 6 –Cover and cook on low until the chicken is tender, about 5-6 hours.

Step 7 –Serve with rice!
