These golden chicken breasts are braised in a creamy, cheesy, rich sauce influenced by the beauty and cuisine of the Tuscan countryside. Ingredients
- 1 tablespoon extra-virgin olive oil
- 4 chicken breasts, boneless and skinless
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 teaspoon dried oregano
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 1/2 cups cherry tomatoes, halved
- 3 cups baby spinach
- 1/2 cup heavy cream
- 1/4 cup parmesan, freshly grated
- lemon wedges, optional, to taste, for serving
Directions
Step 1 –In a skillet over medium heat, heat the oil.
Step 2 –Add the chicken, the salt, the pepper, and the oregano and cook until the chicken is golden, with the meat reaching an internal temperature of 165 degrees F, about 8 minutes per side.
Step 3 –Transfer the chicken from the skillet and set it aside.
Step 4 –In the same skillet over medium heat, melt the butter.
Step 5 –Stir in the garlic and cook until fragrant, about 1 minute.
Step 6 –Add the cherry tomatoes and season them with the salt and the pepper.
Step 7 –Cook the tomatoes until they begin to burst.
Step 8 –Add the spinach and cook until it begins to wilt, about 2 minutes.
Step 9 –Stir in the heavy cream and the parmesan and bring the mixture to a simmer.
Step 10 –Reduce the heat to low and simmer until the sauce is slightly reduced, about 3 minutes.
Step 11 –Return the chicken to the skillet and cook until heated through, about 5-7 minutes.
Step 12 –Serve with the lemon wedges.
