Ingredients

  • 1 cup coconut milk, well-shaken and stirred
  • 1 cup or 8 ounces white rum, divided
  • 6 cups ice, divided
  • 1 cup strawberries, quartered
  • 1 tablespoon lemon juice
  • 1 cup pineapple, chopped
  • 2 teaspoons blue spirulina powder

Directions

Step 1 –Add the coconut milk, 2 1/2 ounces of the rum, and 2 cups of the ice to a blender or food processor.

Step 2 –Blend until you achieve a slushy consistency. This mixture will become the white layer of the finished drink.

Step 3 –Freeze the white mixture until you’re ready to pour the drinks.

Step 4 –Using the blender or food processor, mix the strawberries, lemon juice, 2 1/2 ounces of the rum, and 2 cups of the ice until you achieve the same slushy consistency. This will be the red layer.

Step 5 –Freeze the red layer.

Step 6 –Add the pineapple, spirulina, 2 1/2 ounces of the rum, and 2 cups of the ice.

Step 7 –Blend until you achieve the same slushy consistency for the blue layer.

Step 8 –Freeze the blue layer.

Step 9 –When you’re ready to serve, retrieve the slushy mixtures from the freezer. If the mixtures are solid, use a fork to loosen them up.

Step 10 –Layer the three different colors in the glasses, and serve!
