Ingredients

  • 3/4 cup butter, at cool room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup molasses
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon allspice
  • white sparkling sugar, for topping

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line cookie sheets with parchment paper or silicone baking mats.

Step 3 –In a large bowl, beat the butter, granulated sugar, and brown sugar together using an electric mixer on medium speed until fluffy, about 3 minutes.

Step 4 –Add the eggs, vanilla, and molasses, mixing on medium speed until well-combined, about 1-2 minutes.

Step 5 –Add the flour, baking soda, salt, ginger, cinnamon, and allspice, stirring until just combined but being careful not to over-mix. Over-mixing leads to gluten development, which leads to tougher cookies.

Step 6 –Scoop about 1 1/2 tablespoons of dough and dip it in the white sparkling sugar on one side only.

Step 7 –Place the scoop of dough, sugar side up, on the prepared baking sheets.

Step 8 –Repeat the scooping and dipping process with the rest of the dough.

Step 9 –Bake until the edges of the cookies are set, but the cookies still look a little under-baked in the cracks, about 8-14 minutes.

Step 10 –Let the cookies cool on the baking sheets for 5 minutes.

Step 11 –Transfer the cookies to a wire cooling rack and allow them to cool to room temperature.

Step 12 –Serve!
