Alfredo Casserole

Al dente pasta shells are paired with diced chicken breast and fresh broccoli florets, then simmered in a creamy Romano and parmesan cheese Alfredo sauce and crowned with a buttery, cracker topping for the perfect forkful of great flavor. Ingredients

  • 3/4 pound medium pasta shells
  • 2 cups broccoli florets
  • 7 tablespoons salted butter
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 3 1/2 cups half-and-half
  • 3/4 cup parmesan cheese, shredded
  • 1/2 cup Romano cheese, shredded
  • 1 large chicken breast, boneless and skinless, cooked and shredded
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup buttery crackers, crushed

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large pot of salted, boiling water, cook the pasta shells, about 4 minutes.

Step 4 –Add the broccoli to the pasta shells and cook until the pasta is al dente, about an additional 4 minutes. Drain the water.

Step 5 –While the pasta is cooking, in a large skillet over medium heat, melt the butter.

Step 6 –Add the garlic to the melted butter and cook, about 1 minute.

Step 7 –Whisk the flour into the butter mixture and heat, about 1 minute.

Step 8 –Gradually add the half-and-half to the flour mixture and let it come to a gentle simmer.

Step 9 –Reduce the heat to low and cook the sauce, while stirring, about 1-2 minutes.

Step 10 –Gradually sprinkle the parmesan and the Romano into the sauce and cook, whisking continuously, until it is well-combined. Turn off the heat.

Step 11 –Add the cooked pasta and the broccoli to the sauce and stir to combine.

Step 12 –Stir the cooked chicken into the pasta mixture.

Step 13 –Pour the pasta mixture into the prepared baking dish and sprinkle with the mozzarella cheese.

Step 14 –Bake the casserole until the cheese has melted, about 10 minutes.

Step 15 –Sprinkle the casserole with the cracker crumbs and bake, about 5 minutes.

Step 16 –Let the casserole rest, about 5-10 minutes.

Step 17 –Serve.
