Ingredients

For the bake:

  • 2 cups rotini pasta, uncooked
  • 1 pound ground beef
  • 1/2 cup onion, chopped
  • 2 teaspoons fresh garlic, minced
  • 1 (10.75-ounce) can condensed cheddar cheese soup, not diluted
  • 1/2 cup milk
  • 1 (14.5-ounce) can petite diced tomatoes, drained
  • 1/4 cup sweet pickle relish
  • 2 tablespoons yellow mustard
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 cups cheddar cheese, grated, divided

Optional garnishes:

  • green onions, to taste, sliced
  • dill pickles, to taste, chopped or sliced
  • fresh parsley, to taste, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 2-quart baking dish with cooking spray.

Step 3 –Cook the pasta in boiling, salted water to al dente, according to the package directions. Drain.

Step 4 –While the pasta cooks, cook and crumble the beef, the onion, and the garlic in a large skillet over medium-high heat until the meat is no longer pink. Drain the excess grease.

Step 5 –Stir the condensed soup, the milk, the tomatoes, the pickle relish, the mustard, the ketchup, the Worcestershire sauce, the salt, the pepper, 1 cup of the cheese, and the cooked pasta into the beef mixture.

Step 6 –Transfer the beef mixture to the prepared baking dish and sprinkle with the remaining cheese.

Step 7 –Bake the casserole until the cheese is melted and the casserole is heated through, about 15-20 minutes.

Step 8 –Garnish the casserole with the sliced green onions, the dill pickles, and the fresh parsley.

Step 9 –Serve.
