All-The-Herbs Roasted Potatoes

All-The-Herbs Roasted Potatoes take your side dish back to the basics, but what tasty basics they are indeed! It’s as simple as coating the extra fluffy potatoes in your favorite herbs and roasting them until they are crispy on the outside and just wonderful! Virtually every main course can be elevated with All-The-Herbs Roasted Potatoes at its side, whether it be chicken, steak, or pork! Although you may not even need a main course, you might just want to snack on these potatoes!

Ingredients

  • 2 pounds red or yellow potatoes, scrubbed and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 3 tablespoons fresh herbs, such as rosemary, parsley, thyme, and/or basil, chopped
  • 1/2 teaspoon paprika
  • coarse salt, to taste
  • pepper, to taste

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Soak the potatoes in cold water for up to 1 hour; this helps remove the starch from the potatoes and makes them fluffier.

Step 3 –Drain and dry the potatoes.

Step 4 –Toss the potatoes, the olive oil, the garlic powder, the herbs, the paprika, the salt, and the pepper together.

Step 5 –Place the coated potatoes on a baking sheet and bake until they have browned and are tender, about 30-35 minutes.

Step 6 –Serve.
