Amazing Arugula Salad

Be prepared to be amazed by the Amazing Arugula Salad! Step right up and you’re sure to be in awe of just how delicious the crispy arugula, dowsed in the lemony dressing, and topped with juicy roasted grapes, crunchy almonds, and smooth parmesan taste together! It’s a blend of textures and flavors that are out of this world. You didn’t believe eating healthy foods could taste this good, and well, the Amazing Arugula Salad is here to show you that it can!

Ingredients

  • 1/2 cup whole almonds
  • 1 cup seedless red grapes
  • extra-virgin olive oil, to taste
  • sea salt, to taste
  • freshly ground black pepper, to taste
  • 1/2 tablespoon tamari
  • 6 cups arugula
  • lemon vinaigrette, store-bought or homemade, to taste
  • 1/4 cup parmesan or pecorino, shaved

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line two baking sheets with parchment paper.

Step 3 –Place the almonds on one of the prepared baking sheets and place the grapes on the other baking sheet.

Step 4 –Drizzle the almonds and the grapes with the extra-virgin olive oil, then sprinkle both with the salt and the pepper.

Step 5 –Drizzle the tamari over the almonds and toss to combine.

Step 6 –Place the grapes in the oven and roast them until they are soft and just starting to burst, about 7-15 minutes.

Step 7 –At the same time, place the almonds in the oven and roast them until they are dark and toasty, about 7-10 minutes.

Step 8 –In a large, shallow bowl, add the arugula and the lemon vinaigrette and toss to combine.

Step 9 –Top the arugula with the roasted almonds, the roasted grapes, and the parmesan.

Step 10 –Season the salad with the salt and the pepper.

Step 11 –Serve.
