Ingredients

For the salad:

  • 1 (12-ounce) package romaine lettuce leaves
  • 1 large tomato, diced
  • 1 avocado, diced
  • 1 pickling cucumber, diced
  • 3/4 cup feta cheese, crumbled
  • 1/4 cup red onion, diced
  • 1/4 cup white corn kernels
  • 1/4 cup black beans, cooked
  • 1/4 cup crushed tortilla chips, or to taste

For the dressing:

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground cumin
  • salt, to taste
  • black pepper, to taste

Directions

Step 1 –Place the romaine lettuce in a large bowl.

Step 2 –Add the tomato, the avocado, the cucumber, the feta cheese, the onion, the corn, and the black beans, tossing to combine.

Step 3 –Sprinkle the tortilla chips over the salad.

Step 4 –Whisk the olive oil, the lemon juice, the cumin, the salt, and the pepper together in a bowl until a smooth dressing forms.

Step 5 –Drizzle the dressing over the salad and serve.
