Ingredients
- 1 cup butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar, packed
- 2 medium ripe bananas, mashed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups potato chips, crushed
- 1 cup butterscotch chips

Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –In a large bowl, add the butter, the sugar, and the brown sugar and mix with an electric hand mixer until it is light and fluffy, about 5-7 minutes.
Step 3 –Beat the mashed bananas, the eggs, and the vanilla into the butter mixture.
Step 4 –In a second bowl, whisk the flour, the baking soda, and the salt together.
Step 5 –Gradually beat the flour mixture into the butter mixture.
Step 6 –Fold the potato chips and the butterscotch chips into the cookie dough.
Step 7 –Drop the cookie dough, by heaping tablespoonful, onto one or two greased baking sheets, 2 inches apart from each other.
Step 8 –Bake the cookies until the edges are golden-brown, about 10-12 minutes.
Step 9 –Transfer the baking sheets to a wire rack and let the cookies cool, about 5 minutes.
Step 10 –Place the cookies on the wire rack to cool completely.
Step 11 –Serve.
