Ingredients
- 3/4 cup yellow cornmeal
- 1 cup flour, spooned and leveled
- 1/2 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 8 tablespoons butter, divided, plus more, to taste, for topping
- 1/4 cup vegetable oil
- 1 cup granulated sugar
- 1/3 cup honey, plus more, taste, for topping
- 2 large eggs
- 1 1/4 cups buttermilk
Directions
Step 1 –Preheat your oven to 375 degrees F.
Step 2 –Set a 9-inch cast-iron skillet into the oven while it preheats.
Step 3 –In a small mixing bowl, combine the cornmeal, the flour, the salt, the baking soda, and the baking powder. Set it aside.
Step 4 –Melt 7 1/2 tablespoons of the butter and place it in a large bowl.
Step 5 –Add the oil, the sugar, and 1/3 cup of the honey into the bowl with the melted butter. Stir until well-combined.
Step 6 –Add in the eggs and thebuttermilk, whisking until mixed thoroughly.
Step 7 –Using a spatula or wooden spoon, stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
Step 8 –Remove the cast-iron skillet from the oven. Grease the sides and the bottom of the skillet with the remaining 1/2 tablespoon of the butter.
Step 9 –Pour the batter into the hot greased skillet, lightly smoothing out the top.
Step 10 –Place the skillet back into the oven and bake until a toothpick inserted into the center comes out clean and the top is golden-brown, with the edges pulling away from the pan, about 28-32 minutes.
Step 11 –Once fully cooked, remove the bread from the oven and allow it to cool for 5-10 minutes before slicing and serving.
Step 12 –Top with the extra butter and the extra honey and serve.
