Enriched with tangy buttermilk, melty sharp cheddar, and even a few florets of broccoli for a touch of refreshment, Crazy-Good Cornbread will have people going nuts over it! Ingredients
- 2 tablespoons vegetable oil
- 2 cups self-rising buttermilk white cornmeal mix
- 1 cup all-purpose flour
- 2 large eggs
- 3 cups buttermilk
- 2 cups broccoli florets, chopped
- 1 1/2 cups cheddar cheese, shredded
Directions
Step 1 –Pour the vegetable oil into a 12-inch iron skillet.
Step 2 –Place the skillet into a cold oven and then preheat the oven to 425 degrees F.
Step 3 –In a large bowl, whisk together the cornmeal mix, the flour, the eggs, and the buttermilk until smooth.
Step 4 –Stir in the broccoli and the shredded cheese.
Step 5 –Once the oven has completely preheated, carefully transfer the skillet from the oven.
Step 6 –Pour the cornbread batter into the hot skillet.
Step 7 –Bake the cornbread until a tester inserted into the center comes out clean, about 35-40 minutes.
Step 8 –Serve.
