Ingredients

  • 2 tablespoons vegetable oil
  • 2 cups self-rising buttermilk white cornmeal mix
  • 1 cup all-purpose flour
  • 2 large eggs
  • 3 cups buttermilk
  • 2 cups broccoli florets, chopped
  • 1 1/2 cups cheddar cheese, shredded

Directions

Step 1 –Pour the vegetable oil into a 12-inch iron skillet.

Step 2 –Place the skillet into a cold oven and then preheat the oven to 425 degrees F.

Step 3 –In a large bowl, whisk together the cornmeal mix, the flour, the eggs, and the buttermilk until smooth.

Step 4 –Stir in the broccoli and the shredded cheese.

Step 5 –Once the oven has completely preheated, carefully transfer the skillet from the oven.

Step 6 –Pour the cornbread batter into the hot skillet.

Step 7 –Bake the cornbread until a tester inserted into the center comes out clean, about 35-40 minutes.

Step 8 –Serve.
