You know when you were younger, and your mom wouldn’t let you have something sweet until you finished your dinner? Well, now that you’re older, you can eat as you please! But sure, you still want to keep the appearance of being a mature adult… so, that’s where Bourbon Potato Bake comes in to play. This creamy mound of mashed sweet potatoes is just so sweet, it truly tastes like something mom would have displayed on the dessert table. But it’s not dessert! It’s a bourbon-infused (so classy, right?!) and brown-sugary delight that’s perfect for serving alongside holiday meals, weeknight meals, and all the meals in between! It’s the best trick there is in the adulting rule book. Mom is sure to laugh at you when you explain this logic to her, but she’ll be head-over-heels for your Bourbon Potato Bake!

Ingredients

For the potato bake:

  • 8 cups sweet potato, cooked and mashed
  • 3/4 cup half-and-half
  • 1/2 cup brown sugar, packed
  • 1/2 cup bourbon
  • 2 large eggs
  • 1/4 cup honey
  • 3 teaspoons vanilla extract
  • 1 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon molasses, optional
  • 1/2 teaspoon ground cardamom, optional
  • 1 cup sweetened coconut, shredded
  • 3/4 cup golden raisins
  • 1 1/2 cups miniature marshmallows

For the brown sugar topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/3 cup butter, melted
  • 1 cup pecans, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large bowl, combine the sweet potatoes, the half-and-half, 1/2 cup of the brown sugar, the bourbon, the eggs, the honey, the vanilla extract, 1 1/4 teaspoons of the cinnamon, the salt, the molasses, and the cardamon.

Step 4 –Stir the coconut and the raisins into the sweet potato mixture.

Step 5 –Pour the sweet potato mixture into the prepared baking dish and top with the marshmallows.

Step 6 –In a bowl, add the flour, the remaining brown sugar, the remaining cinnamon, the butter, and the pecans and stir to combine.

Step 7 –Sprinkle the brown sugar mixture over the marshmallow layer.

Step 8 –Bake the potato bake until it is heated through and the topping is golden-brown, about 35-40 minutes.

Step 9 –Serve.
