Ingredients

  • 1 (30-ounce) package frozen shredded hash browns
  • 1 1/2 cups smoked ham, chopped
  • 3 tablespoons olive oil
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 2 tablespoons fresh chives, chopped

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Cut six sheets of heavy-duty foil about 12-16 inches long, then lightly coat them with nonstick spray.

Step 3 –In a large bowl, add the hash browns, the ham, the olive oil, the salt, and the pepper and stir to combine.

Step 4 –Equally divide the hash brown mixture, placing it in the center of each of the prepared foil sheets.

Step 5 –Sprinkle the hash brown mixture with the cheese.

Step 6 –Fold up all four sides of the foil packets over the hash brown mixture to cover and seal completely.

Step 7 –Place the foil packets on a baking sheet and bake until the cheese has melted and the hash browns are heated through, about 20-25 minutes.

Step 8 –Carefully uncover the foil and serve the hash brown mixture garnished with the chives.
