Ingredients
- 2 pounds chicken thighs, boneless and skinless
- 1 teaspoon dried tarragon
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup water, divided
- 1/2 cup brown sugar
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons balsamic vinegar
- 1 tablespoon cornstarch
Directions
Step 1 –Add the chicken to the slow cooker.
Step 2 –In a small bowl mix together the tarragon, the salt, the pepper, and 1/2 cup of the water.
Step 3 –Pour the seasoning mixture over the chicken.
Step 4 –Cover and cook on high for 2 1/2 hours.
Step 5 –In a saucepan, mix the brown sugar, the soy sauce, the balsamic vinegar, the cornstarch, and the remaining water.
Step 6 –Heat over medium heat on the stovetop until the sauce starts to thicken.
Step 7 –Pour the sauce over the chicken while still in the slow cooker and toss to coat.
Step 8 –Cook the chicken mixture in the slow cooker for 1 hour on low.
Step 9 –Remove the chicken thighs to a cutting board or baking sheet and shred with two forks.
Step 10 –Serve with the sauce on the side.
