Buffalo Potatoes

There is so much you can do with a simple potato. You can fry them, mash them, bake them… literally there are so many options! But this is hands down one of the best ways to serve up this beloved ingredient: Buffalo Potatoes! The zesty buffalo sauce, crunchy bacon, crisp green onions, and tangy sour cream all mixed together take the classic spud to the next level. Buffalo Potatoes pack a punch, so get ready for some flavor and fun!

Ingredients

For the potatoes:

  • 4 pounds large Yukon Gold potatoes, cut into 1-inch cubes
  • 1 medium sweet yellow pepper, chopped
  • 1 small red onion, chopped
  • 1/2 cup buffalo wing sauce
  • 1 cup cheddar cheese, shredded

Optional garnishes:

  • bacon, cooked and crumbled
  • green onions, to taste, sliced
  • sour cream, to taste

Directions

Step 1 –Add the potatoes, the yellow pepper, and the onion to a 6-quart slow cooker.

Step 2 –Add the buffalo sauce to the vegetables and stir to coat.

Step 3 –Cover the slow cooker and cook the potato mixture, stirring halfway through, until the potatoes are tender, about 6 hours on low heat.

Step 4 –Sprinkle the cheese over the potato mixture, cover, and cook until it has melted, about 15 minutes.

Step 5 –Transfer the potato mixture to a serving bowl.

Step 6 –Top the potato mixture with the bacon, the green onions, and the sour cream.

Step 7 –Serve.
