Butter Basted Pork Chops

Butter Basted Pork Chops literally coats the pork in an herb-infused butter to create the most gorgeously-golden and crispy crust with enhanced richness. In other words, Butter Basted Pork Chops are exactly as delicious as they sound, and it takes less than an hour to make. Indulgence never felt so easy or tasted quite so good.

Ingredients

  • 2 (14-16-ounce) pork loin chops, bone-in, center-cut, and about 1-1/4-inches thick
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 2 sprigs sage
  • 3 cloves garlic, gently smashed
  • 1 onion, thinly sliced

Directions

Step 1 –Season the pork chops with salt, pepper, and paprika.

Step 2 –Let the pork chops stand at room temperature for 30 minutes.

Step 3 –Heat the olive oil in a large cast-iron skillet over medium-high heat.

Step 4 –Add the pork chops and cook, flipping occasionally, until well browned on all sides and a thermometer inserted into the thickest part of the pork (but not touching the bone) reads 120 degrees F, about 10-14 minutes.

Step 5 –Reduce the heat to medium.

Step 6 –Move the pork chops to one side of the skillet.

Step 7 –Add the butter, rosemary, thyme, sage, garlic, and onion to the cleared side of the skillet.

Step 8 –Cook, constantly basting the pork with the melted seasoned butter, until a meat thermometer inserted into the thickest part of the pork (but not touching the bone) reads 140 degrees F, about 2-4 minutes.

Step 9 –Remove the pork from the heat and let it rest on a cutting board for 5 minutes. The pork should continue to rise in temperature to 145 degrees F.

Step 10 –Once the pork reaches a safe temperature, serve whole or sliced against the grain and topped with the melted butter.
