Cookie Monster™ Muffins

Thanks to the use of oats and creamy, nutty peanut butter, each bite feels like a bite of an amazing cookie and a fluffy muffin all at once! Oh, and the melty colorful candies certainly help! No matter how many Cookie Monster Muffins you eat, you’ll always find room for just one more! Now where were we? Oh yes, OM NOM NOM!

Thanks to the use of oats and creamy, nutty peanut butter, each bite feels like a bite of an amazing cookie and a fluffy muffin all at once! Oh, and the melty colorful candies certainly help! No matter how many Cookie Monster Muffins you eat, you'll always find room for just one more! Now where were we? Oh yes, OM NOM NOM!

Ingredients

  • 1 cup smooth peanut butter
  • 3 large eggs
  • 1 cup milk
  • 1 (15.25-ounce) box yellow cake mix
  • 2 cups quick oats
  • 1 cup mini candy-coated chocolates

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Grease 24 muffin tins.

Step 3 -Add the peanut butter, the eggs, and the milk into a large mixing bowl and use an electric mixer to combine the egg mixture until smooth.

Step 4 -Add the cake mix and the quick oats to the butter mixture and mix with the electric mixer until fully combined.

Step 5 -Add the mini candy-coated chocolates to the bowl and fold them in using a rubber spatula.

Step 6 -Spoon the muffin batter into the prepared muffin tins, filling each up 2/3 of the way.

Step 7 -Bake until a toothpick inserted into the center of the muffins comes up clean, about 14-16 minutes.

Step 8 -Allow the muffins to cool for 5 minutes.

Step 9 -Serve.
