Ingredients

  • 1 1/2 pounds brussels sprouts, trimmed, halved or quartered if large
  • 4 small shallots, peeled, sliced into 1/2-inch thick wedges
  • 2 tablespoons extra-virgin olive oil
  • kosher salt
  • freshly ground black pepper
  • 3/4 cup heavy cream
  • 1 3/4 cups mild cheddar cheese, shredded
  • 6 ounces bacon, chopped into small bits
  • 2 sourdough bread, thin slices, torn into small bits
  • 1/2 teaspoon lemon zest, finely grated
  • 1 tablespoon fresh parsley leaves, finely chopped

Directions

Step 1 –Set the oven to 425 degrees F.

Step 2 –In a 13×9-inch oven-safe dish, add in the sprouts with the shallots and 2 tablespoons of the oil.

Step 3 –Season with salt and pepper.

Step 4 –Bake until the sprouts are a bright green and crispy-tender, mixing halfway through, around 20 minutes.

Step 5 –Add the bacon to a medium-sized skillet and cook over medium heat. Stir occasionally, until the bacon is golden, around 8 minutes.

Step 6 –Use a slotted spoon and move the bacon to a plate.

Step 7 –Pour almost all of the bacon fat, and add the sourdough breadcrumbs into the pan. Cook and make sure to stir frequently, stop when the breadcrumbs are toasted, around 5 minutes.

Step 8 –Add half the bacon into the skillet with the breadcrumbs and mix it to combine. Save the remaining half for stirring in the sprouts.

Step 9 –Add the breadcrumb mixture into a large mixing bowl.

Step 10 –Stir in lemon zest and parsley into the bowl, then season it with your salt and pepper.

Step 11 –To finish the sprouts, move the dish out of the oven and add the reserved bacon to the sprouts and shallots. Toss it all to combine.

Step 12 –Pour heavy cream on the sprout mixture and garnish the top evenly with the cheese.

Step 13 –Return the baking dish to the oven and bake until the cheese is melted and the cream is bubbly and thickened, about 17 minutes more.

Step 14 –Turn the oven to broil. Broil until the cheese is golden, about 2 more minutes.

Step 15 –Sprinkle the breadcrumb mixture over the baked gratin.

Step 16 –Serve warm.
