Cheese dips have been a perpetual party-pleaser since time immemorial, and there are plenty of perfectly delicious options you could make. But this Cheesy Sausage Dip is easily the meatiest and heartiest of them all for an extra satisfying snack! Mixed with seasoned, savory sausage and bright tomatoes, this cheese dip is more than its (already delicious) cream cheese and cheddar cheese base. However many tortilla chips you serve alongside it, you’re going to need more to satisfy everyone’s appetite for Cheesy Sausage Dip.

Ingredients

  • 1 pound breakfast sausage, uncooked, preferably bulk, casings removed
  • 1 (8-ounce) package cream cheese, cut into 1-inch cubes
  • 1 cup sharp cheddar cheese, shredded and divided
  • 1 (15-ounce) can fire-roasted diced tomatoes with green chilies, juices reserved
  • 1-2 tablespoons hot sauce, optional, to taste
  • 2 medium scallions, thinly sliced
  • tortilla chips, optional, for serving

Directions

Step 1 –Arrange an oven rack to the middle position.

Step 2 –Preheat the oven to 425 degrees F.

Step 3 –Heat a large skillet over medium-high heat.

Step 4 –Add the sausage to the pan, breaking it up with a wooden spoon as it cooks, until it browns, about 6-8 minutes.

Step 5 –Add the cream cheese, 1/2 of the cheddar cheese, the can of tomatoes and green chiles, and the hot sauce.

Step 6 –Heat, stirring frequently until the mixture is well combined and the cheese is melty, for about 5 minutes.

Step 7 –Pour the mixture into a small baking dish.

Step 8 –Sprinkle the top with the remaining cheddar cheese.

Step 9 –Bake until the cheese is completely melted and the dip is bubbling around the edges, about 20-25 minutes.

Step 10 –Remove the dip from the oven and sprinkle with the sliced green scallions.

Step 11 –Serve hot with lots of tortilla chips!
