Ingredients
- 2 tablespoons vegetable oil, divided
- 8 ounces chicken breasts, boneless, skinless, and sliced into strips
- 1/2 cup large sweet red peppers, chopped
- 1/2 cup green onions, chopped
- 3 cups brown rice, cooked
- 2 tablespoons light soy sauce
- 1 tablespoon rice wine vinegar
- 1 cup frozen peas, thawed
Directions
Step 1 –Add 1 tablespoon of oil to a large skillet and warm over medium heat.
Step 2 –Once the oil is hot, add the chicken, red pepper, and green onion to the skillet.
Step 3 –Cook until the chicken is cooked through, about 5-7 minutes.
Step 4 –Remove the chicken from the skillet and set aside.
Step 5 –With the skillet still on medium heat, add the remaining oil.
Step 6 –Add the cooked rice and cook for 2-4 minutes, stirring to prevent sticking and burning.
Step 7 –Combine the soy sauce, vinegar, and peas into your skillet with the fried rice; cook for 1 minute.
Step 8 –Stir in the chicken and vegetable mixture. Serve hot.
