Tweety’s Chicken Fried Rice

Tweety’s Chicken Fried Rice turns white rice into golden, savory morsels of flavor as they toast in nutty sesame oil with tender veggies and savory chicken! Umami-packed soy sauce and crunchy green onions take the Asian-inspired flavors to the next level and make leftover rice the thing to have! Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 3 chicken breasts, boneless and skinless
  • kosher salt, to taste
  • ground black pepper, to taste
  • 2 tablespoons sesame oil, divided
  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, freshly minced
  • 4 cups white rice, cooked
  • 3/4 cup frozen peas
  • 3 large eggs, beaten
  • 3 tablespoons low-sodium soy sauce
  • 2 green onions, thinly sliced

Directions

Step 1 –In a medium skillet over medium heat, add the olive oil.

Step 2 –Season the chicken with the salt and the pepper on both sides.

Step 3 –Add the chicken breasts to the hot oil and cook until golden all over and they reach an internal temperature of 165 degrees F, about 8 minutes per side.

Step 4 –Transfer the chicken breasts to a cutting board and let them rest for 5 minutes.

Step 5 –Cut the chicken into bite-sized pieces.

Step 6 –In the same skillet over medium heat, add 1 tablespoon of the sesame oil.

Step 7 –Add the onions and the carrots to the hot sesame oil and cook, while stirring, until soft, about 5 minutes.

Step 8 –Add the garlic and the ginger and cook, while stirring, until fragrant, about 1 minute.

Step 9 –Add the rice and the peas and cook, while stirring, until warmed through, about 2 minutes.

Step 10 –Push the rice-veggie mixture to one side of the skillet.

Step 11 –Add the remaining sesame oil to the cleared side of the skillet.

Step 12 –Add the egg to the hot sesame oil and cook, while stirring constantly, until almost fully cooked.

Step 13 –Fold the eggs into the rice mixture.

Step 14 –Add the chicken, the soy sauce, and the green onions to the rice mixture and stir to combine.

Step 15 –Cook until heated through, about 2-3 minutes.

Step 16 –Serve.
