Ingredients

  • 1/4 cup vegetable oil
  • 3 medium shallots, thinly sliced
  • 1 medium red bell pepper, chopped into 1/2-inch pieces
  • 1 pound chicken thighs, thinly sliced
  • 3 cloves garlic
  • 3 Thai bird’s eye chilies, finely diced
  • 2 1/2 cups white rice, long-grain, cooked, and day-old
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons fish sauce
  • 1 teaspoon brown sugar, packed
  • 3/4 cup basil leaves, packed

Directions

Step 1 –Over medium-high heat, heat the oil in a wok.

Step 2 –Add the shallots and bell pepper, cooking and stirring until the shallots are tender and fragrant, about 2 minutes.

Step 3 –Add the chicken, cooking until nearly cooked through, about 5 minutes, stirring constantly.

Step 4 –Add the garlic and chilies, stirring until fragrant, about 1 minute.

Step 5 –Add the rice and cook for 3 minutes.

Step 6 –In a small mixing bowl, whisk together the oyster sauce, soy sauce, fish sauce, and brown sugar.

Step 7 –Pour the sauce over the rice mixture until thoroughly mixed.

Step 8 –Check that the chicken is cooked through and registers 165 degrees F when checked with a meat thermometer.

Step 9 –Remove the wok from the heat and stir in the basil before serving.
