Ingredients
- 1 cup cornmeal
- 1 tablespoon baking powder
- 1 cup all-purpose flour
- 1 1/2 tablespoons sugar
- 3/4 teaspoon salt
- 1 (16 ounce) bag frozen corn, thawed and drained
- 1 cup milk
- 1 cup sour cream
- 6 tablespoons butter, melted
- ground black pepper, to taste
- 8 ounces bacon, crispy, diced, and divided
- 1-2 jalapeños, minced, to taste, and divided
- 1 1/2 cups cheddar cheese, grated and divided
Directions
Step 1 –Preheat the oven to 350 degrees F with the rack placed in the center position.
Step 2 –Grease a 9×13-inch baking dish generously. Set aside.
Step 3 –In a large bowl, whisk the cornmeal, baking powder, flour, sugar, and salt together.
Step 4 –Add in the corn, milk, and sour cream. Stir to combine.
Step 5 –Mix in the butter, black pepper, 7 ounces of the bacon, 3/4 of the jalapeños, and 1 cup of the cheese until just combined.
Step 6 –Pour the mixture into the prepared baking dish.
Step 7 –Smooth the top.
Step 8 –Sprinkle the top with the remaining jalapeños, bacon, and cheese.
Step 9 –Bake until golden brown, about 40-45 minutes.
Step 10 –Serve.
