Creamy Comfort Potatoes

Mmm, rest a spell, won’t you? Take comfort in some Creamy Comfort Potatoes! And why not go for seconds while you’re at it? The tender, buttery potatoes are enhanced with milk and savory onions, and then seasoned just right to let the great potato and butter flavor shine through. Creamy Comfort Potatoes are like a warm hug of a side dish!

Ingredients

  • 3 pounds potatoes, thinly sliced
  • 1/2 onion, thinly sliced
  • salt, to taste
  • ground black pepper, to taste
  • 9 tablespoons all-purpose flour
  • 6 tablespoons butter, diced
  • 3 cups whole milk, plus more, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Thoroughly grease a 9×13-inch baking dish.

Step 3 –Cover the bottom of the prepared baking dish with a single layer of 1/3 of the potatoes.

Step 4 –Top the potatoes with a single layer of 1/3 of the onion slices.

Step 5 –Season the onion layer with the salt and the pepper.

Step 6 –Sprinkle 3 tablespoons of the flour evenly over the onions.

Step 7 –Distribute 1/3 of the butter evenly over the flour layer.

Step 8 –Repeat the layers twice.

Step 9 –In a saucepan over medium-low heat, add 3 cups of the milk and gently heat it until warmed through.

Step 10 –Carefully pour the milk into the baking dish, making sure to cover the potatoes and the onion. There should be enough milk to fill the dish to the top. If the milk doesn’t quite fill it, heat up the extra milk and add it as needed.

Step 11 –Cover the dish in foil and bake for 45 minutes.

Step 12 –Remove the foil and bake until the potatoes are fork-tender, about 10-15 minutes.

Step 13 –Serve warm.
