Crispy Chicken Fritters

These fast and easy patties take tender chicken and infuse them with zesty, fragrant seasonings that bring out the wild side in its savory personality. Then it’s coated in breadcrumbs and pan-fried to a crunchy, golden brown, exactly what you need to perk you up in the afternoon! Crispy Chicken Fritters are amazing in sandwiches, on salads, or served all on their own. Since you can make them in just 15 minutes, you might have them with all three!

Ingredients

  • 2 (12.5-ounce) cans of white premium chunk chicken breast
  • 1 egg
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt, plus more to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon dried thyme
  • 1 1/4 cup plain dried bread crumbs, divided
  • vegetable oil, for pan-frying

Directions

Step 1 –Drain the chicken well.

Step 2 –Roughly chop the chicken. A consistent size will ensure consistent texture in the final product.

Step 3 –Add the chopped chicken, egg, dijon mustard, salt, garlic powder, onion powder, black pepper, and dried thyme.

Step 4 –Stir in 1/4 cup of bread crumbs.

Step 5 –Pour the remaining bread crumbs into a shallow bowl.

Step 6 –Portion the chicken mixture into six fritters.

Step 7 –Coat the fritters on both sides with the bread crumbs.

Step 8 –Heat about 1/4 inch of the vegetable oil in a large skillet over medium to medium-high heat.

Step 9 –When the oil is hot, pan-fry the fritter on each side until golden brown and crispy, about 4-5 minutes per side.

Step 10 –Serve.
