A creamy spiced pumpkin purée batter is deep-fried into perfect golden-brown nuggets and served with a creamy chipotle mayonnaise that just hits the spot. Ingredients
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/4 teaspoons salt
- 3/4 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
- 2 large eggs, room temperature
- 1 (15-ounce) can pumpkin purée
- 1/2 cup 2% milk
- 2 tablespoons butter, melted
- vegetable oil, to taste
- chipotle mayonnaise, optional, store-bought or homemade, to taste
Directions
Step 1 –In a large bowl, add the flour, the baking powder, the salt, the chili powder, the onion powder, and the red pepper flakes and whisk to combine.
Step 2 –In a separate large bowl, add the eggs, the pumpkin, the milk, and the melted butter and whisk until blended.
Step 3 –Add the flour mixture to the pumpkin mixture and stir until it is just moistened.
Step 4 –In a deep cast-iron skillet or deep-fat fryer, add the vegetable oil and heat it to 375 degrees F.
Step 5 –Use a tablespoon to drop the batter mixture, a few at a time, into the heated vegetable oil and fry until both sides are golden-brown, about 1 minute 30 seconds-2 minutes.
Step 6 –Use a slotted spoon to transfer the fried fritters to a paper-towel-lined plate to drain.
Step 7 –Repeat the frying process until all of the batter is used.
Step 8 –Serve the fried fritters with the chipotle mayonnaise.
