Mimi’s Classic Meatloaf

Mimi has figured out how to really master meatloaf… and now so can you! Mimi’s Classic Meatloaf delivers everything a great meatloaf should and more. It’s tender, beefy, savory, and hearty, with plenty of herb flavor baked right in. On top of that, well, it can’t be a classic meatloaf or Mimi’s Classic Meatloaf without a sweet, rich glaze with notes of tangy mustard. Sometimes, embracing the classics is how you make the best dinnertime impression!

Ingredients

For the meatloaf:

  • 1 cup panko breadcrumbs
  • 1 cup milk
  • 1 tablespoon butter
  • 1 medium-size yellow onion, diced
  • 2 cloves garlic, minced
  • 2 pounds ground beef
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt

For the topping:

  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon spicy brown mustard
  • parsley, optional, to taste, chopped, for garnish

Directions

Step 1 –Preheat the oven or the grill to 350 degrees F.

Step 2 –Line a baking sheet with parchment paper or foil.

Step 3 –In a small bowl, add the breadcrumbs and the milk and stir to combine.

Step 4 –In a large sauté pan over medium-high heat, melt the butter.

Step 5 –Add the onions and cook, while stirring occasionally, until they are fragrant and slightly brown, about 3-5 minutes.

Step 6 –Reduce the heat to low.

Step 7 –Add the garlic and cook until fragrant, about 2-3 minutes.

Step 8 –Transfer the pan from the heat and allow the onion-garlic mixture to cool.

Step 9 –In a large bowl, add the ground beef, the egg, the soaked breadcrumb mixture, the Worcestershire sauce, the dried thyme, the salt, and the cooled onion-garlic mixture and use your clean hands to combine, taking care not to overwork the meat.

Step 10 –Shape the meat mixture into a loaf shape on the prepared baking sheet.

Step 11 –Using a sharp knife, cut a crisscross pattern on top of the meatloaf.

Step 12 –Bake the meatloaf for 40 minutes.

Step 13 –In a bowl, add the ketchup, the brown sugar, and the mustard and mix to combine.

Step 14 –Spread the sauce mixture over the meatloaf and bake until the meatloaf reaches an internal temperature of 160 degrees F, about 30-35 minutes.

Step 15 –Slice and serve garnished with the parsley.
