Ingredients
- 1 cup panko breadcrumbs
- 1/4 cup parmesan cheese, finely grated
- 2 teaspoons parsley, finely chopped
- 1/4 teaspoon red pepper flakes
- 9 ounces refrigerated three-cheese tortellini
- 1/2 cup all-purpose flour
- canola oil, to taste
- 2 large eggs, beaten
- 1/2 cup marinara sauce, warmed, for serving
Directions
Step 1 –In a small bowl combine the panko breadcrumbs, the parmesan cheese, the parsley, and the red pepper flakes.
Step 2 –Bring a large pot of salted water to a boil.
Step 3 –Cook the tortellini until 1 minute before it reaches al dente, according to the package directions.
Step 4 –Drain the tortellini and coat it generously with the flour.
Step 5 –In a Dutch oven over medium-high heat, heat enough of the oil to cover the tortellini by 1-2 inches to 375 degrees F.
Step 6 –Dip each tortellini into the beaten eggs and then into the breadcrumb mixture.
Step 7 –Working in batches, add the tortellini to the oil and cook until golden-brown, about 5 minutes on each side.
Step 8 –Place the tortellini onto a paper towel and pat dry.
Step 9 –Serve the tortellini with the marinara sauce.
