Ingredients

  • 4 pounds salmon filets
  • 1 cup plain breadcrumbs
  • 1 cup parmesan cheese, grated
  • 1/3 cup parsley, finely chopped
  • 6 cloves garlic, minced
  • 1/2 cup butter, melted
  • salt, to taste
  • pepper, to taste
  • lemon wedges, to serve

Directions

Step 1 –Preheat the oven to 400 degrees F with the rack positioned in the middle.

Step 2 –Line a baking sheet with aluminum foil.

Step 3 –Place the salmon skin-side down on the prepared baking sheet. Set it aside.

Step 4 –In a mixing bowl, combine the breadcrumbs, parmesan, parsley, and garlic.

Step 5 –Pour the melted butter over the breadcrumb mixture and season it with salt and pepper.

Step 6 –Mix the breadcrumb mixture together until the butter is completely absorbed.

Step 7 –Press the breadcrumb mixture into the salmon filet until completely covered.

Step 8 –Lightly spray the salmon with cooking spray to achieve a nice, golden brown once baked.

Step 9 –Place the salmon in the oven and bake until the salmon can be easily flaked with a fork, about 12-15 minutes.

Step 10 –Slice the salmon into individual servings.

Step 11 –Serve with the lemon wedges.
