Day After Thanksgiving Soup

After a long day of cooking and all your guests have left, the last thing you want to do is spend another endless session in the kitchen. No one wants to do that many dishes two days in a row, right?! You still have to eat, though, and take out isn’t always the most satisfying solution, especially after a day of feasting! Day After Thanksgiving Soup is here to solve all your problems! This simple, comforting tomato soup only requires five ingredients, most of which you probably already have in your pantry. It only takes one dish to make (lifesaving!) and it’s ready in under 45 minutes… And we might add, most of that time is just for simmering on the stove top. You can take a little breather from all the fun yet tiring festivities and still enjoy something homemade, warm, and tasty thanks to Day After Thanksgiving Soup!

Ingredients

  • 4 tablespoons unsalted butter
  • 1/2 large onion, cut into large wedges
  • 1 1/2 cups water, low-sodium vegetable stock, or low-sodium chicken stock
  • 1 (28-ounce) can whole peeled or crushed tomatoes
  • 1/2 teaspoon fine sea salt, plus more to taste

Directions

Step 1 –In a Dutch oven or large saucepan over medium heat, melt the butter.

Step 2 –Add the onions, the water, the tomatoes with their juices, and 1/2 teaspoon of the salt to the melted butter.

Step 3 –Bring the soup mixture to a simmer and cook, uncovered, stirring occasionally, and adding more of the salt, as needed, about 40 minutes.

Step 4 –Transfer the soup to an immersion blender and blend until slightly smooth. It is okay for it to still have some texture.

Step 5 –Serve warm.
