The potatoes are tender on the inside, crisp on the outside, and topped with rich butter, melty cheese, and crisp bacon crumbles. Ingredients
- 6 potatoes, peeled and cubed
- 3 strips bacon
- 1/4 cup unsalted sweet butter, melted
- salt, to taste
- pepper, to taste
- 1/2 cup cheese, of your choice, shredded
- dried chives, to taste, plus more, for garnish
- sour cream, to taste, optional, for garnish

Directions
Step 1 –In a large pot of salted boiling water, cook the potatoes until they are fork-tender, about 20 minutes.
Step 2 –Preheat the oven to 375 degrees F.
Step 3 –In a skillet over medium-high heat, cook the bacon until crisp, about 8-10 minutes.
Step 4 –Drain the bacon on paper towels.
Step 5 –Once the bacon is cooled, crumble the slices.
Step 6 –Drain the potatoes and add them to a 9×13-inch casserole dish.
Step 7 –Pour the melted butter over the potatoes and season them with the salt and the pepper.
Step 8 –Top the potatoes with the shredded cheese, the crumbled bacon, and the chives.
Step 9 –Bake until the cheese is melted, about 5 minutes.
Step 10 –Serve garnished with the extra chives and the sour cream.
