Dumpling Casserole

Dumpling Casserole! It’s a casserole… with dumplings! Yes, we’re excited, too! How can we not be? Tender dumplings with fragrant basil infused throughout, soaking up all the rich chicken flavor of the casserole… you don’t even need to serve bread on the side, because you have something much better already on the plate! It’s Dumpling Casserole, so it’s as cute as the name implies and twice as tasty!

Ingredients

For the casserole:

  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/4 cup butter, cubed
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon pepper
  • 4 cups chicken broth
  • 1 (10-ounce) package frozen green peas
  • 4 cups chicken, cooked and cubed

For the dumplings:

  • 2 cups biscuit/baking mix
  • 2 teaspoons dried basil
  • 2/3 cup 2% milk

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large saucepan, sauté the onion and the celery in the butter over medium heat until they are tender, about 5 minutes.

Step 4 –Add the garlic to the veggie mixture and cook until it is fragrant, about 1 minute.

Step 5 –Stir the flour, the sugar, the salt, the basil, and the pepper into the veggie mixture until it is blended.

Step 6 –Gradually add the broth to the veggie mixture and bring it to a boil.

Step 7 –Cook and stir the veggie mixture until it has thickened, about 1 minute.

Step 8 –Reduce the heat to low, then add the peas to the veggie mixture and cook, stirring constantly, for 5 minutes.

Step 9 –Stir the chicken into the veggie mixture.

Step 10 –Pour the chicken mixture into the prepared baking dish.

Step 11 –In a small bowl, combine the baking mix and the basil.

Step 12 –Stir the milk into the baking mix with a fork until it is moistened.

Step 13 –Drop the dumpling batter by the tablespoon in mounds over the chicken mixture.

Step 14 –Bake the casserole, uncovered, for 30 minutes.

Step 15 –Carefully cover the dish with foil and bake until a toothpick inserted into the thickest dumpling comes out clean, about 10 minutes.

Step 16 –Serve.
