Ingredients
- 1 (4-pound) round roast
- 1/4 cup extra-virgin olive oil
- 3 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves, chopped
- 2 teaspoons kosher salt
- 1 teaspoon black pepper, freshly ground
Directions
Step 1 –Allow the roast to sit uncovered at room temperature for 1 to 2 hours.
Step 2 –Preheat the oven to 450 degrees F.
Step 3 –In a small bowl, combine the oil, garlic, rosemary, thyme, salt, and pepper.
Step 4 –Rub the mixture all over the roast.
Step 5 –Place the roast in a roasting pan fitted with a roasting rack.
Step 6 –Roast for 15 minutes, then reduce heat to 325 degrees F and roast for an additional 1 hour and 45 minutes for medium, or 2 hours for medium-well.
