Easy Steak Tacos

The secret to Easy Steak Tacos isn’t in the meat (as amazingly tender as it is) but in the marinade. The marinade is bright with citrus flavors, sweet with garlic and soy sauce, tangy, herby, and jumping with spice. You may be tempted to just eat the steak as is with such a marinade, but Easy Steak Tacos are even heartier and more satisfying with their warm tortilla envelopes. These tacos take a little bit of preparation but the difference is apparent from the very first bite!

Ingredients

For the marinade:

  • 2 limes, juiced
  • 1 orange, juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1/4 cup cilantro, packed
  • 1 teaspoon cumin

For the tacos:

  • 1 1/2 pounds flank steak
  • 8 corn tortillas or flour tortillas, small and warmed

Directions

Step 1 –Combine the lime juice, orange juice, olive oil, garlic, soy sauce, cilantro, and cumin in a blender, pulsing until the mixture is a smooth marinade.

Step 2 –Pour the marinade over the flank steak in a resealable bag or a medium bowl.

Step 3 –Let the steak sit in the marinade for at least 1 hour or up to overnight.

Step 4 –Preheat the grill or a grill pan to medium-high heat.

Step 5 –Cook each side of the steaks to the desired doneness, reading 130 degrees F for medium-rare and 140 degrees for medium, about 3-5 minutes per side.

Step 6 –Allow the steaks to rest off the heat for 5-7 minutes before slicing.

Step 7 –Cut the steaks into bite-sized pieces. Cut against the grain to ensure the steak is as tender as possible.

Step 8 –Serve the steaks in the warmed tortillas.
