Egg Drop Soup is more than just an appetizer; it’s an enchanting dish with clouds of wispy, savory eggs swimming tantalizingly through the warm broth. With plenty of crunchy green onions, Egg Drop Soup is perfect when paired with stir-fry or fried rice. Best of all, it only takes 15 minutes to make a bowl of this warming broth.

Ingredients

  • 3 cups chicken broth
  • 1 tablespoon cornstarch
  • 2 tablespoons water, cold
  • 1 large egg, lightly beaten
  • 1 green onion, sliced

Directions

Step 1 –In a large saucepan, bring the broth to a boil over medium heat.

Step 2 –Combine the cornstarch and water until a smooth slurry forms.

Step 3 –Gradually stir the slurry into the broth.

Step 4 –Bring the broth mixture to a boil.

Step 5 –Cook and stir until thickened, about 2 minutes.

Step 6 –Reduce the heat to low.

Step 7 –Drizzle the beaten egg into the hot broth, stirring constantly.

Step 8 –Remove the soup from the heat.

Step 9 –Stir in the onion.

Step 10 –Serve hot!
