Ingredients

  • 2 everything bagels, cut into 1-inch pieces
  • 5 tablespoons salted butter, melted
  • 1 cup whipped cream cheese
  • 1/4 cup plus 2 tablespoons water
  • 3 tablespoons fresh dill, chopped
  • 2 tablespoons champagne vinegar
  • 1 1/2 tablespoons capers, chopped and drained
  • 1/2 teaspoon black pepper
  • 12 ounces of fresh baby spinach
  • 2/3 cup red onion, very thinly sliced
  • 8 ounces cold-smoked salmon, thinly sliced
  • 1 tablespoon plus 1 teaspoon of everything bagel seasoning
  • dill sprigs, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –On a baking sheet, toss together the bagel pieces and the melted butter; spread the pieces in an even layer.

Step 3 –Bake until toasted, about 8-10 minutes, turning once halfway through the bake time.

Step 4 –Let the toasted bagel pieces cool for about 10 minutes.

Step 5 –In a large bowl, whisk together the cream cheese, water, chopped dill, vinegar, capers, and pepper until well combined. The mixture will be slightly chunky.

Step 6 –Add the spinach, onion, and toasted bagel pieces to the dressing and toss to coat.

Step 7 –Divide the spinach mixture evenly among four plates.

Step 8 –Top each plate evenly with the salmon, sprinkle with the bagel seasoning, and garnish with the dill sprigs.

Step 9 –Serve.
